Quick & Easy After School Snacks
Apple Cookies
Everyone loves a sweet treat after school and these apple cookies but a healthy twist on that idea. Almost Supermom shares three recipes for apple cookies including a Trail Mix Apple Cookie, Coconut Caramel Apple Cookie, and a Chocolate Hazelnut Apple Cookie. For each recipe you start by coring the apples and cutting them into circles. Then covering them with the spread of choice and topping.
- Trail Mix = Peanut butter + granola and chocolate chips toppings
- Coconut Caramel = Caramel spread + toasted coconut
- Chocolate Hazelnut = Nutella + pretzel pieces
Pepperoni Cheese Stick Roll-Ups
These delicious snacks are super quick and easy. Just wrap a triangle of crescent roll dough around half a cheese stick and six pepperoni. Bake at 350 degrees for about 10 minutes. Serve with marinara sauce. Done! Find the full instructions here.
Chocolate Banana Pops
Take one large banana and cut it into 1/2 to 3/4 inch slices. Skewer onto a toothpick. Dip into melted chocolate chips and lay on baking sheet. Freeze overnight. Serve frozen. Crunchy Roasted Chickpeas
I know what you’re thinking…my kid will never eat chickpeas BUT you might be wrong. My nephew LOVES this recipe and has no idea how healthy they are for him. LOL! To make this simple recipe take two cans of chickpeas (drained, rinsed, and dried), toss with olive oil, and bake at 400 degrees for 45 minutes. Toss with salt and 1 1/2 tsp of your favorite seasoning (cinnamon, pepper, paprika etc.) and serve. These last up to a week so are great to have on hand! Find the full recipe here.
Cinnamon Twists
For this recipe there is only ONE main ingredient…pizza dough! Simply cut the dough into 3/4 inch strips to start. Then, melt 1/4 cup butter and whisk together 1/2 cup sugar and 2 tsp. cinnamon. Brush with butter and roll in cinnamon sugar. Next, twist strips in opposite directions and bake at 375 degrees for 20 minutes. Yum! Find the full recipe here!
