I love the winter squashes for making soups, my all time favorite comfort food. It’s so easy to include nutritious greens, such as kale, to squash soups, and of course ginger always adds a good flavor and touch of zing. Winter veggies also make great additions to stews, and as accompaniments to pot roasts. Lots of easy to prepare/clean up one-dish meals make those comfort foods even more comforting!
