These muffins are super tasty. I picked up the recipe from a health magazine a long time ago and have made them a few times for Thanksgiving brunch. Not only are they healthy enough to pass off as a breakfast food, but adding ice cream can turn them into a dessert-worthy combo.

To save money in the kitchen, bake a double recipe, let them cool, and then freeze them. Muffins, like most bread products, freeze extremely well. Thaw out by popping them in the microwave or toaster oven. To change the recipe, I toss different nuts in the mix like walnuts or almonds and I switch ¼ cup sugar for agave syrup. It makes the muffins moist and I’ve read agave syrup won’t spike your sugar levels as much as regular sugar. If you are looking for dessert recipes for Thanksgiving try a pumpkin bread recipe. I usually don’t post grocery coupon matches until Wednesday, but Cathy from Chief Family reports that now through Thanksgiving Ralphs is doubling coupons worth up to $1 for a total discount of $2 off.

So a $.50 coupon doubles to $1.

A $.75 coupon doubles to $1.50.

A $1 coupon doubles to $2.

Any coupon worth $1.01 or more does not double.

Previously, coupon doubling maxed out at $1 off (so a $.75 coupon doubled only to $1 off).  Make sure that coupons worth $1 or less double as you check out.

If you combine this temporary coupon doubling promotion with Ralphs’ buy 10 participating items, get $5 off Mega Sale, there are a lot of freebies.

A reader left a comment months and months ago about how her Mom bought so many groceries she saved almost a dollar per gallon at the gas pump. I was highly skeptical, until I overheard a cashier tell a customer checking out in front of me that she had 325 gas points.

Two phones ago I lost the capacity to (gasp) text message! When I went to the Verizon store they told me that there was nothing I could do except wait until my upgrade kicks in, buy a new phone ($$$) or wait it out. (Yes, I waited it out.)
