Also, to tag onto what Myke just wrote - don't throw those roast chicken bones away! Put them in a pot, cover with water, add a few vegis. Bring to a boil and simmer for quite a while (skim off the scum) and you have a good chicken broth. To make this even more fat free, put cooled broth into a container and put in the fridge. Then you can pop off the fat that comes to the top the next day. If you don't eat it right away, you can freeze it in small containers.

Something good to make, inexpensive and goes a long way is soup. Lentil and pea soups are hearty and filling. Vegetable soup is good and uses up any left over vegetables at the end of the week. I'm single so I make a big pot and freeze the extra in individual containers and I always have something hot to eat. Plus, eating soup before, or as, a meal fills you up. You can put some meat into the soup and every soup recipe is fair game for modification based on what is on hand in the cupboard.

Don't forget the roast chickens at Costco. They are huge and cost only $4.99. If chicken isn't on sale, you can't buy a whole one that cheap. I buy one and it lasts me a whole week.

I have a cheap, healthy breakfast every day at work. I purchased big containers of oatmeal, frozen blueberries, and raisins from Costco, and a 2 lb. bag of brown sugar and wheat germ from a grocery story. Then I make my own oatmeal (it is healthier, tastier, and has less sugar) in the microwave at work. One day it is a raisin oatmeal, one day blueberries, and sometimes I'll put in mixed oats from Trader Joes or a bit of cinnamon for a twist. I've been doing this for years, and it saves a lot of money and calories!

Yes, Christiane, this is possible. Have been feeding 2 adults for $150/m for years. All good quality produce, some meat, dairy, wine. Make hot meals everyday using little rice or pasta. Mainly veggies with meat as an accent and different spices to change the flavor profile. Work 50+ hours a week so have little time but usually spend 2 hr. on Sunday and another 1 hour throughout the week getting everything prepared. Includes all 3 meals a day ( go out 1x a week).

You can do this if it is important enough for you to make some changes. Give it a try :)
