I stopped frying most food long ago, and now bake many things, including catfish, which is traditionally fried. Oven "fries" can be made from yams or russets, and are really tasty. The pork scallopini looks good, and would go nicely with the sprouts. My late husband liked sprouts simply steamed, then slathered with butter! Roasted beets are delish. I sometimes cube the cooked beets, then top them with either lowfat sour cream or nonfat plain yogurt and chives (use the green tops of scallions).
Now I've made myself hungry. Good thing I have veggies in the fridge!

Thanks for the link love! I truly enjoy the challenge of cooking what's season in ways that taste fantastic. Cooking food that's in season automatically tastes better AND is cheaper. What's not to like?
