As much as I love saving money by not eating meat (gave it up for Lent), I am already day dreaming about how to break my fast on Easter.

You’re right to think about what you do eat….I have friends who had been on a vegetarian diet for a while and their systems had problems with meat at first…takes longer to digest…I’d say wait a week or so before chowing down on some steak or barbecue!
If you want to add protein to a dish, go to an Indian market and buy some garam flour. It’s chick pea/garbanzo flour, nice nutty flavor, it thickens up nicely and very good source of protein. I’ve sauteed cabbage & carrots and then stirred in the garam. It makes for a nice glaze. Do let it cook a little…otherwise you’ll get the slightly raw flavor you sometimes find in falafel mixes. And yes, I’ve used it on brussel sprouts also…(love the sprouts!).
